These delicate little cakes not only look as cute as anything, they are also completely free of refined sugar and gluten, and are perfect for a special reakfast treat

• 250g hazelnuts

• 50g ground almonds

• Pinch sea salt

• ½ tsp baking soda

• Contents of 1 rooibos tea bag

• ½ tsp cinnamon

• 50g butter, melted and cooled

• 2 free-range eggs

• 1 tsp vanilla extract

• 3 tbsp honey

For the cream cheese topping

• 200g cream cheese

• 30g coconut sugar

• 1 tsp vanilla extract

• 1 tsp good-quality cinnamon

For the decorations

• Handful of freeze-dried

blueberry slices

• 120g Nutella

• 90g butter, melted and cooled (re-weigh after melting and add a little extra butter if needed)

• 120g brown sugar

• 45g sugar

• 1 size 8 egg, at room temperature

• 1 tsp vanilla bean paste or extract

• 160g plain flour

• ¾ tsp espresso powder or fine instant coffee (optional)

• 3g (½ tsp) kosher salt

• ¼ tsp baking powder

• ¼ tsp baking soda

• 115g dark chocolate, coarsely chopped, plus extra for the tops if desired

• Flaky sea salt such as Maldon

Line a baking tray with baking paper. Put Nutella into a piping bag or a sealable plastic bag and snip the end off. Pipe small blobs onto the baking paper about 1½cm diameter.
