MELON WITH PROSCIUTTO

Think of this as more of a nifty reminder than recipe. I’m forever astonished about how delicious this combo is and go out of my way to keep remembering to do it throughout summer. Whichever cunning Italian it was who came up with the idea, I salute you. Refreshing, salty, sweet, snacky perfection. You might even want to roll these up with a blob of fresh cheese as well.

PREP TIME: 15 MINUTES COOK TIME: NADA SERVES: 4-6 AS A SNACK

• Zest and juice of 1 lemon

• Handful of mint leaves, finely chopped

• 1 tsp honey

• ½ tsp balsamic vinegar

• Black pepper

• Olive oil

• ½ a melon

• 8 slices prosciutto

1. In a bowl, combine the lemon zest, chopped mint, honey, balsamic vinegar and pepper with a squeeze of lemon juice and a few tbsp of oil. Whisk together into a smooth dressing.

2. Carefully slice the skin off the melon and cut into about 8 thin wedges.

3. Wrap the melon slices in the prosciutto and arrange on a platter.

4. Spoon the mint dressing over the top and serve immediately.
